Quibia is a fantasy name conjured up by the Anima Negra team that refers to an imaginary place where there are no known limits or boundaries ... a name that is perfectly appropriate for this white wine made partially from red grapes!
50% Premsal and 50% Callet, from vines of 21 years average age grown in soils of calcareous silt with iron oxide. Three months maceration followed by three months on lees in cement vats.
Aromas of white peach, pear, sea brine and jasmine. Weighty on the palate with creamy texture and concentrated flavors but simultaneously fresh.
Pair with bay scallops, mussels in butter broth, and peasant-style migas
