Domaine Barat Chablis A.C. 2015
Dating back to 1795, Domaine Barat is located just outside of the city of Chablis in the village of Milly. The matrimony of Joelle and Michel Barat brought together the 21 vineyard hectares in 1972 that are now run by their two children, Angele and Ludovic Barat. They continue to share their parents’ passion for the land as the family’s sixth generation.
The vineyards are located on south-facing slopes of Kimmeridgian and Portlandian marl that formed millions of years ago during the Jurassic era when the sea covered the region of Chablis. The soils consist of mineral rich clay and limestone with marine fossils. Ludovic Barat manages the vineyards of 100% Chardonnay grapes using organic, herbicide-free fertilizers and viticultural practices, as well as green pruning.
The Domaine Barat Chablis comes from 40-year-old Chardonnay vines planted on south-facing, clay/limestone soils with Kimmeridgian and Portlandian marl formed during the Jurassic Era.
Hand-picked grapes are gently press and racked for 12 to 14 hours where malolactic fermentation takes place on the lees in temperature controlled vats. Only indigenous yeast is used. All lots are vinified and aged in small stainless steel tanks, lightly fined before bottling.
