Harvest is done manually to ease the sorting provess. The grapes are transported directly to the winery where they are pressed. The juice extraction is slow and delicate. Fermentations, alcoholic and malolactic, occur in stainless steel tanks. The bottling takes place in the spring after clarification, with an extra dose of Cabernet Sauvignon lending polished yet powerful tones.
Tasting notes: Whilst dry and crisp, there is fine intensity of strawberry and white peach fruit. This could well turn out to be a provence rose wine that improves and gains complexity with age.
