Hand harvest early September. Maceration at controlled tempera-ture of 26-28 C for 8 days; pumpover every 6 hours for 15 minutes. Aged in steel vats for 5 to 6 months
Ruby red color with purple tinges, intense and elegant scent, mel-low and round taste with good tannins and medium body.
Serve with roasted meats, meat casseroles, fresh and semi mature cheeses.
