70% Grenache, 15% Syrah, 10% Mourvedre, 5% Cinsault 

Ripeness determines the order that grape varieties are picked in, which is why different varieties of grape are often vinified separately. After being fully de-stemmed, the grapes are then gravity-fed into 10,000 liter cement vats where they are immediately cooled. During the fermentation period, each concrete vat is mechanically stirred once or twice daily. Pumping over occurs and heating elements are used to ensure that the wine is kept at a temperature between 25 and 30°. Wines are left to macerate for 20 to 40 days. This is a blend of 3 cuvées: 50% Père Pape, 25 % La Crau de ma Mère, and 25% Clos du Calvaire. Père Pape is primarily a product of the appellation’s southern terroirs at Grand Coulet.
