Pago Florentino Tempranillo 2014
A Pago wine with a distinct identity
2014 is the 14th vintage produced by the Protected Designation of Origin Pago Florentino. It is a wine produced in a genuine pago, an unique terroir about which we learn something new every year, making each vintage better than the previous one despite the differences between them. The vineyards are located at the foot of a hill, protected on the north by a mountain range and facing south toward two natural lakes. The climate is extreme—very cold winters and hot summers with minimal rainfall. The soil has pebbles on the surface (perfect drainage), clay subsoil with a high retention potential (for this reason, vines in summer suffer a moderate water stress), and a layer of slate below that works as a basin.
PRODUCTION AND AGEING:
100% Tempranillo. At harvest time, grapes are hand-picked and selected on a sorting table. Once they are de-stemmed, they are filled into casks by gravity. The process is as follows: cold maceration (15°C) for about five days, pumping and, above all, piegage during the alcoholic fermentation process for about seven days at about 26°C. Part of the wine undergoes malolactic fermentation in new oak casks and ages for about 12 months in French and American oak casks. The wine is not chemically stabilized.
